Ingredients½ cup Cold mashed potato
1 cup Dark chocolate chips
1tsp coconut oil
½ tsp Vanilla extract
½ cup of topping ingredients (cocoa powder, coconut flakes, chopped nuts, powder caramel)

Preparation1. Combine the chocolate and coconut oil in a dish and melt in the microwave using 30s intervals.
2. Once the chocolate has melted, stir in the mashed potato followed by the vanilla.
3. Place the mixture in the fridge for about 30 minutes until firm.
4. Remove the mixture from the fridge, take tablespoon-sized chunks, and roll them to form the truffles.
5. Roll the truffles in the desired mixes and refrigerate.
