Buttermilk rusks
Ingredients
1,5kg Self-raising flour
200g White Sugar
10ml Salt
500g Butter
500ml Buttermilk
3 Jumbo eggs

Preparation
Preheat the oven too 200C on FanPlus.
Coat 2 20x20 baking tins with cooking spray and set aside.
Combine the flour, sugar and salt in the mixer using the bread hook.
Add the butter in stages until the flour starts to stick then add the eggs and buttermilk.
Mix until the dough forms a solid ball then remove and knead on a lightly floured surface for 5 minutes using the “folding” method.
Shape the dough into little balls and place side-by-side.
Bake for 30 minutes at 200C. After 30 minutes, reduce the temperature to 180C and continue baking for an additional 20 minutes.
Turn out onto a wire rack, break into rusk size pieces and place them onto a baking sheet.

Dry the rusks at 100C for 4 hours.
