PreparationBeat together the egg yolk, vanilla pulp, lemon zest and caster sugar until creamy. Fold in the stiffly beaten egg whites. Sift the baking powder with the flour, add the ground almonds and fold into the mixture. Grease and flour a springform tin and pour in the mixture. Level the surface and bake until golden. After baking, drizzle with Amaretto and leave to cool. To make the topping, mix the icing sugar with Amaretto and drizzle over the cake.
